It's super healthy, so I use it everywhere instead of wheat flour, and the loaves made with this spelt variety are simply outstanding! I've been baking bread for over a year due to health issues. I've tried many types of flour from different sources, and none of them have been as satisfying as this one. The bread comes out delicious, fluffy, crispy, and soft inside, with a wonderful aroma, and that's thanks to the spelt flour. Previous flours I've tried have been soggy.
